Long Island Hot Water Heater

I refer to our telephone discussion on 8 July, 2024 concerning replacing the hot water heater in a cottage on Long Island.  In particular, the current heater is under a kitchen counter and about 35 years old, and now bust.  We discussed replacing it with a new instant hot water heater.  We don't have demand for lots of hot water, nor for very hot water, so the smallest model heater will probably do.

I spoke with Belco and they confirmed that the service there is 100 amps.  I also took photos of the meter and under the circular panel, and you can just make out the "100".
In addition to the new hot water heater (which I understand will draw about 30 amps), we also have (1) an electric stove top, about 30 amps (see below), (2) one split air conditioning unit, about 16 amps (see below), (3) 2 small fridge and freezer under-counter units, (4) a dishwasher, and (5) miscellaneous lights and outlets.    
Here is the spec for the stove top.  So far as I can tell, it has a current draw of 30.8 amps Stove Top Spec  
There is one split air conditioning unit by Carrier.  The photos are of the indoor unit and its serial tag and, below, the outdoor unit and its serial tag.  The tags seem to be identical and say "rated current" is 16 amps - I assume this means for the pair it is 16 amps.
 
These photos are of the circuit breaker box.  It looks like slots 14 and 16 are for the current hot water heater - which appears to have a 220 volt 20 amp breaker in it.
Finally, these photos show the current hot water heater which is bust.  As mentioned, it is in the void of the right angle where 2 kitchen counter tops meet.  To the side, is the underside of the kitchen sink which has a garburator.  It looks like a tight squeeze, but I assume you should be able to remove the old heater, but you will also have to dismantle the garburator.  By the dimensions you gave me for the new unit, there should be plenty of space in the void.
The power plug is also back there and which I estimate is only about 10 feet of conduit from the circuit breaker box - they back onto the same wall.
